Hey Dipsticks (what we decided to call our followers haha)!! We decided that our first post would be a recipe...our favourite spinach dip recipe!! It is based off of Kelsey's three cheese spinach dip but has been adapted to how we really like it! It is simple and quick, especially if you have others join in the fun of making it!
One of my favourite parts of this recipe is that it makes A LOT! We had enough to feed 4 for a late night snack and 6 people for lunch (with some left over). We split the mix into two batches, one in a small oval Pampered Chef stone dish and the other in a large round stone dish. So yes this recipe makes enough for your family gatherings and potlucks for sure!! In the past I have put it all in one 9x9 baking stone and that worked really well too. This recipe can also be easily frozen and eaten later! Just add the cheese on top when you are ready to bake it!
The recipe itself can be adapted to fit your likes or to match what you actually have in your kitchen pantry! For example, if you are out of red onions you can substitute it with yellow, green or even dried onion flakes. Also it says to use 1 cup of whipping cream but we actually used 1 cup of half and half in our most recent making of it and it still tasted delicious (definitely a BIT healthier too). This version of spinach dip contains peppers, you can take them or leave them but for me they add a wonderful crunch and sweetness to this salty treat!
Now about cheese! For our families, we make sure to add extra cheese. You can never have too much cheese right? Well maybe but we have yet to reach that point! You can use really any type of cheese and mix and match as much as you want. We normally use marble cause that is what our family likes but I'm sure old or even mozzarella would work too! You could even use a smoked cheese like smoked cheddar or gouda to give it a new flavour...I will definitely be trying that in the future! Making it yourself gives you the freedom to add as much or as little cheese as you want...we prefer much😆

Kelsey's 3 Cheese Spinach Dip
1 Tbsp butter
1 Cup whipping cream (or half and half)
3 packages cream cheese cut into cubes
1 Tbsp minced garlic (about 2 cloves)
1 tsp black pepper
2 tsp Worcestershire sauce
2 tsp hot sauce (Tabasco or Franks)
1/2-1 cup cheese (plus some for on top)
1/4 cup finely chopped red onion
1/3 cup finely chopped red pepper
1 box frozen chopped spinach, thawed and drained
Preheat oven to 350 *F. In a medium saucepan, melt butter over medium-low heat. Do not brown. Whisk in cream. Add cream cheese and continue cooking until cream cheese is melted. Whisk well until smooth.
Add garlic, black pepper, Worcestershire sauce and hot sauce. Whisk again until well blended. Remove from heat. Add grated cheese and stir until cheese melts and sauce thickens. Stir in chopped onions, peppers, and spinach. Mix well until blended.
Pour into bakeware stone(s) or pan(s). Sprinkle more cheese on top. Bake for 20-25 minutes or until hot and bubbly (can also be microwaved).
Serve with nacho chips or fried pita chips. We used air-fried naan bread with some seasoning and it was wonderful!
